Using an 8-inch, non-stick skillet, melt butter over medium heat. Add beaten eggs. Add the eggs begin to coagulate, add the 3 cheeses evenly over the eggs. As cheese begins to melt, and before the eggs get brown, flip or turn egg mixture over. Continue to cook until the cheese melts. Turn omelette 1 more time. The finished omelette will be a nice yellow color with the cheese melted. Serve immediately.

Breakfast Veggie Pattie

Place frozen pattie on a microwave safe plate. Microwave on HIGH,turning over halfway through cooking time. Approximatly 1 1/2 minutes.

Cut two light mozzarella cheese sticks in half lengthwise. Roll about 1 ounce of sliced roasted turkey breast (lightly covered with mayo) around half of the mozzarella cheese stick. Do this with the three remaining halves, for a total of 4 rolls.

Slice chicken to desired size and alternate chunks of chicken with onions and peppers. Grill until cooked.

Substitute veggies with alternatives if you wish.

Instant Brown Rice

Combine rice, water and butter in a saucepan. Bring to a boil. reduce heat (medium-low to medium) and cover. Simmer 10-12 minutes or until water is absorbed. Fluff with fork and serve.
